福州世祖胡椒餅 Fuzhou ShiZu Pepper Cake or Bun

One of the Must Try food in Taiwan is Foochow pepper cakes (or buns). One of the most famous is 福州世祖胡椒餅, perhaps because it's flagship stall is at the super prime location, right at the entrance of the popular Raohe Night Market 饒河夜市 in Taipei.

福州世祖胡椒餅 also has a popular outlet at Chongqing South Road in Taipei. We visited both outlets 😄

The pepper cakes (buns) are made right there at the stall (Chongqing South outlet).

The dough is hand kneaded, packed with minced pork and pork slices together with lots of chopped spring onion.

The cakes are stuck to the inside walls of a charcoal fired tandoor style clay oven.

The pepper cakes are baked at around 300°C till they are crisp golden brown outside.

The piping hot pepper cakes are sold slotted into paper pockets.

福州世祖胡椒餅's pepper cakes (buns) are quite consistent between the Raohe Night Market and the Chongqing South outlets.

The skin is thin, crisp, quite chewy and dry. There is no soupy juice inside the cake (like the type we find in xiao long bao). The ball of minced pork and pork slices with chopped spring onion is tender and moist. The mix of lean meat and fat leans on the lean side i.e. not overly greasy.

We can taste the pork's natural sweetness and the marination's savoury sweet pepperiness. The characteristic grassy taste of spring onion add to the flavours. Be careful. The ball of meat is tongue scathing hot.

It is a delicious pepper cake and hence there is always a long queue at 福州世祖胡椒餅 outlets. But, production is quite efficient, so waiting time is around 15 minutes at most (based on our experience).

👉 Foochow pepper cakes are quintessential Taiwanese street food that you are bound to stumble upon while visiting. Don't leave Taiwan without tasting pepper cakes. 福州世祖胡椒餅's pepper cakes are delicious (though not my personal favourite as the meat ball can be juicier and the skin thicker).

The Raohe Street night market branch of 福州世祖胡椒餅 is the first stall immediately past this archway. There is another pepper cake stall just outside this archway on the left hand side. We haven't tried this outside stall yet. We would love to try it next time.

This Raohe Night Market archway is right at the Songshan Ciyou Temple 松山慈祐宮 entrance. (There is another entrance archway at the other end of Raohe Street 600 metres away.)

    Just to check with you : what is your take between this pepper bun(福州世祖胡椒餅) and the Hong Chun Kopitiam Kompia (福州光饼) at Taman Tun Aminah ? Both are made in a tandoor oven and both are Fuzhou in origin.
