勝利號蚝仔煎 Victory Oyster Omelette stall founded nearly 50 years ago is one of the Must Try stalwarts at Liaoning Night Market 遼寧夜市 in Taipei.

The stall is now run by third generation owner 陳玉真 - the stall was founded by her grandma.

Youthful 陳玉真 is a master in frying oyster omelette (orh chien in Min language) - the simple looking dish is demanding as it is sensitive to good control of heat 火候. 玉真 tosses a handful of fresh plump oysters onto the sizzling flat griddle, bathes it with splashes of watery sweet potato starch batter, then cracks and spread eggs over it. She also dashes spoonfuls of savoury fish sauce over the omelette.



勝利號蚝仔煎 stall uses plump fresh local Taiwanese oysters from Chiayi County which are known for its sweetness.

The oyster omelette is allowed to sizzle on the hot griddle till the sweet potato batter and egg stiffens, holding the oysters in it. 玉真 lifts the oyster omelette from the griddle once a slight charring appears at the omelette's fringe.

勝利號蚝仔煎's signature oyster omelette has a clutch of crunchy fresh kang kong greens 空心菜 (convolvulus) in the omelette

The oyster omelette is eaten with a mildly spicy or sweet savoury sauce. Many customers pour both sauces together over their oyster omelette.

Customers (many multi generation regulars) like 勝利號蚝仔煎 because the oysters are cooked through yet they remain tender and juicy with natural flavours intact. Regulars appreciate the quality of 勝利號's fresh Chiayi plump smooth sweet oysters. The fried sweet potato batter is tender, stretchy with a slight springy chew. The crunchy kang kong is also a winner with customers (they prefer kang kong over the more commonly used cabbage which tends to make the dish soggy).

勝利號蚝仔煎 stall also serves oyster soup which is fresh oysters cooked in a broth made with pork stock bones - the oyster soup goes perfectly together with the oyster omelette.
